Are you ready for some football nachos?

Who can watch a football game without eating a big old plate of spicy nachos (vegan, of course)? Not me! Obviously you all know how to make nachos but this is how I made mine the other night. I really prefer salsa over diced tomatoes but I didn’t have any and my tomato needed to be used up. Now, these nachos were darn good but I get my salsa fresh from my friend Kris who owns her own salsa company. I pretty much devour the salsa she brings me in a few short days so I was really bummed to not have any. It’s the best salsa I’ve EVER had! Kris… more salsa please!

Tortilla chips
Daiya vegan cheese shreds
Black beans
Tomato (diced) or salsa
Jalapenos (diced)
Avocado (diced)
Baby spinach, cut into shreds

You know the drill. Chips on a plate, top with Daiya cheese, black beans, and diced jalapenos. Microwave until cheese is melty. Top with tomato, avocado, and spinach. Watch football and eat! Now off you go to whip it up vegan!
