Peach Cobbler

I wish it was peach season all year long! These are organic white peaches and they are so sweet and delicious! The house smelled so good while these were baking that it made my mouth water and I gobbled one up as soon as it came out of the oven!

4 c fresh peaches, peeled, pitted, and diced
1 T fresh lemon juice (optional)
1 egg substitute (1 T ground flax meal and 3 T water)
1 c sugar
1 c flour
6 T vegan butter, melted (I use Earth Balance)

Preheat oven to 375

Combine flax meal and water in small saucepan on medium heat until just starts to bubble. Remove from heat. It should be sticky/goopy… this is your egg substitute. Set aside to cool.

Place peaches in lightly greased 8 in square pan or individual ramekins. If using ramekins, set on a foil lined baking sheet.

Sprinkle fresh lemon juice over peaches.

Stir together egg substitute, sugar, and flour until it resembles coarse meal. Sprinkle over peaches.

Drizzle butter over topping.

Bake 40 min or until lightly browned and bubbly.

Garnish with mint sprig, if desired. It would also be great a la mode using vanilla almond dream or other vegan ice cream.

Now off you go to whip it up vegan!
