Dill Veggie Salad


Here’s another “non-recipe” that I whipped up because I was hungry and it’s what I could find in my frig. It was so good, full of flavor, and very filling. The orange thing in this picture is a tomato. I love to get different colored tomatoes when they are in season because they have slightly different flavor. The orange ones I found are a bit sweeter.

Ingredients
Green leaf lettuce, cleaned and torn or cut into pieces
Cucumber, peeled and diced
Tomato, diced
½ avocado, sliced
Radish sprouts
Dill weed, to taste
Sea salt and pepper, to taste
Olive oil

Directions
Pile ingredients on plate and top with avocado. Sprinkle with dill weed, sea salt, and pepper to your liking. Drizzle with olive oil.

Now off you go to whip it up vegan!
