Here’s a really simple recipe for mashed potatoes that you can’t even tell are vegan! All of the quantities are to taste, so add a little at a time to get to the consistency and taste that you like.
Baby red potatoes
Vegan sour cream
Sea salt & Pepper
Fresh chives, chopped.
I don’t peel my potatoes… it saves times and nutrients.
Wash potatoes and put in a large pan, bring to a boil. Reduce to medium heat, cover, and cook until you can easily pierce with a knife.
Drain potatoes and return to stove. I keep the burner on the lowest possible heat. Add almond milk and vegan sour cream and let it cook for a few minutes until you get the right consistency.
Add in the garlic powder, sea salt, and pepper, to taste.
Transfer to a serving bowl and top with chives. Serve with vegan butter or vegan gravy.
Now off you go to whip it up vegan!
