Roasted Carrots

I picked up a couple bunches of the tri-colored carrots from the farmer’s market and made these the same night.  I ate so many carrots I’m surprised I didn’t turn into one!

Ingredients
Carrots
Olive oil
Sea salt & Pepper

Directions
Wash and peel carrots and then cut in half lengthwise.  If some are bigger than others, cut them in fourths so each piece is similar in size (if they are too varying in size the smaller ones will be done faster than the bigger ones).

Put them in a bowl and drizzle with enough olive oil to coat. Sprinkle on sea salt & pepper, to taste.

Line a baking sheet with parchment paper (this is important; if you skip this your carrots will stick to the pan and you will be really sad). Place carrots on sheet and bake on 400 degrees until you can easily insert a knife into the thickest part of the carrot.  Baking time will vary on the size/thickness of your carrots.

Now off you go to whip it up vegan!
