Crunchy Granola

The great thing about making homemade granola is that you can use any type of nut or seed you like!  This recipe contains my favorites but feel free to substitute your favorites.  I like to eat this plain as a snack or as a cereal, with almond milk.  It’s very filling.  This recipe also makes a lot and it keeps nicely but you may want to cut it in half if you don’t want a lot.

6 cups old fashioned oats
1/2 cup flaxmeal
1 cup raw sunflower seeds (not roasted or salted)
1 cup millet (dry/uncooked)
1/4 cup chia seeds
1 cup blanched almonds
1/2 cup + 2 Tbsp extra virgin olive oil
1/2 cup pure maple syrup
2 tsp vanilla
1/2 cup packed dark brown sugar
1/2 tsp sea salt

Preheat oven to 275 degrees.

In a large bowl, combine oats, flaxmeal, sunflower seeds, millet, chia seeds, and almonds.

In a medium saucepan, combine olive oil, syrup, vanilla, brown sugar, and sea salt.  Heat on medium until sugar has dissolved.  Pour the mixture into the bowl of dry ingredients and mix until evenly coated.

Spread granola onto a baking sheet lined with parchment paper.  You may have to bake multiple batches.

Bake for 40 minutes then turn oven to 325 degrees and bake another 10-15 min.

Lightly stir granola once when it comes out of the oven and then let cool.  You don’t need to break up the chunks.

Enjoy as a snack on its own or with almond milk as a cereal.
