Roasted Garlic & Spinach Pizza

If you want a healthy and quick way to satisfy a pizza craving, this one is for you!  This is my favorite thing to make on a Friday night.  For some reason, Friday nights seem like pizza nights, right?

Ezekiel Sprouted Whole Grain Tortillas
Pizza sauce (I use Organicville)
Daiya mozzarella shreds
Fresh garlic, sliced thin
Olive oil
Fresh spinach
Fresh cracked black pepper

Pre-heat oven to 400 degrees.

I like to roast the garlic in a pan first with a drizzle of olive oil until its lightly browned.  Set aside.

Place tortillas on a baking sheet lined with parchment paper.  Top tortillas with sauce (I am in love with sauce so I tend to use a lot but you can use however much you like).  Sprinkle cheese shreds on top.  You don’t need to completely cover the sauce.  Add spinach leaves and sprinkled on a little more cheese shreds.  Top with roasted garlic and fresh cracked pepper.

Bake until the cheese is melted and begins to brown slightly, to your liking.  It should take 10-20 minutes.  Remove from oven, slide parchment paper with pizzas onto a cutting board and slice with a pizza cutter.  Enjoy!
